Maitake is a medicinal mushroom that has been prized for centuries in Japan and China. Traditionally proven to be a rich source of valuable bio-vital substances and to promote vital energy.
In Asia, maitake has always been considered a real delicacy. Its German name is “Klapperschwamm”, which is certainly due to its growth shape.
Maitake contains a large number of different vitamins, minerals and trace elements.
It was first mentioned in writing in an 11th century Japanese fable. The term “Maitake” means “dance mushroom.” Legend has it that nuns got lost in a forest and discovered the maitake – almost starving – as food. After enjoying the mushroom, the nuns are said to have danced happily with the woodcutters who had joined them in anticipation of this happy occasion.
Maitake, which belongs to the family of giant porcupine relatives, has beautiful, brown to glossy gray fruit bodies. The fruit bodies that develop like a bouquet are soft and have a fleshy texture. They are extremely tasty. For many connoisseurs, maitake is the tastiest of all edible mushrooms.
Cultivating this mushroom is extremely difficult. Only through decades of experience in this area and through constant improvement measures are we able to cultivate this mushroom in sufficient quantities. Maitake also grows on a specially designed wooden substrate. The breeding process requires constant monitoring and quick reactions. Therefore, this mushroom is cultivated only by our most experienced employees.
